If you are not too scared of the difficulty and don't mind aged mechanics then you can start the Windows series chronologically with Touhou 6
Other games are either very hard or have some soy in-game mechanics that will distract you from dodging bullets, 11 and 12 being the worst in this matter

Cards around you are charges, they refresh automatically and refresh faster when you stay close to projectiles, all attacks use charges, hold down the attack button to use more charges for a stronger attack, holding down shift also changes your attacks.
